French Thyme | id:24359 | Thymus vulgaris | Ecologically grown | Perennial | Open Pollinated | Heirloom
Perennial, hardy in Zone 4-9. Narrow leaves, distinctly greyer and sweeter than the English variety, although not as pungent. Most flavour variety, favoured in French cuisine. Also suitable for containers & well drained soil in full sun. Produces pale lavender flower.
Companion plants: Potato, Shallot, Tomato, Strawberry, Eggplant, Rose, Salad Burnet, Blueberry, Cabbage, Lavender. 
Far from: Chives, Basil, Cilantro.
Planting tip: Seed stratification is required for 2-4 weeks. Sow indoors 10 weeks before last spring frost. Water sensitive.
Harvesting tip: Pruning encourages bushy growth. Harvest in morning as concentration of aromatics oils are highest at this time.
Storage tip: Fresh thyme should be stored refrigerated and wrapped lightly in plastic; it should last one to two weeks. To dry thyme, hang the sprigs in a dark, well-ventilated, warm area.
