The entire plant is edible, and its flavour is bright and fresh, somewhat reminiscent of lemony celery. Includes quercetin, a plant pigment with anti-inflammatory and antioxidant qualities, in addition to being a rich source of vitamin C and numerous B-complex vitamins. Extremely hardy, and requires very little upkeep. Before setting seed in the late summer, it develops umbels of yellow blooms that resemble umbrellas. The interior of the grayish-brown root is cream coloured.
Planting tip: Sow seeds ¼” deep indoors 5 to 6 weeks before the last frost. Keep soil moist until established, and transplant out at least 24″ apart. Or, direct sow in early spring when soil temperatures are around 16℃.
Harvesting tip: Pick the leaves as needed, at the appropriate maturity level for their intended purpose. Young and tender leaves are best. The stalks can be cooked separately if desired. Young leaves and stalks can be kept whole. Gather stalks and leaves in the morning after the dew has dried for the greatest quality.
